Prawn Salad

I came up with this recipe today as Dave wanted Fish and I wasn't interested so I asked him to get me some prawns - it turned out better then I thought it would.

Prawn Salad

 Ingredients:
200g Prawns ( this is weighted after shelling)
10 slices of red capsicum
10 silces of green capsicum
10 slices of yellow capsicum
8 slices of cucumber
1/2 cup Rocket
2tbs Praise Salad Dressing: Deli Style Honey and & Dijon

Method:

1.Chop up all the salad ingredients and put in a bowl with the rocket and toss - cover with 1tbs of Salad dressing.
2. Heat up a non stick fry pan over high heat
3. Once the pan is smoking hot add your prawns , cook for 3-5 mins depending on size turning only once.
4. While the prawns are cooking place your tossed salad onto a plate and top with the cooked prawns - drizzle the remaining 1tbs of dressing over the prawns.

All up you need 15mins which includes prep, cooking and plating time :)

Serves 1: 288cals per serve ( if you add or take out anything the calorie count will change - I used Calorie King to calculate the total for the meal)
